Natural crystallisation is a normal characteristic of pure honey. It does not mean that the honey is old or spoiled.
Different nectars set at different speeds. Rapeseed may be firm in the jar within weeks; a darker polyfloral may stay liquid longer. Warm the glass gently in water if you prefer it poured. Do not boil it.

Honey is not blended to a house colour. What you taste is the forage of that week, not a laboratory average.
